Subo Newcastle is an intimate space presents a warm vibe and simple décor, serving a 5-course Modern Australian set menu, which changes seasonally.
With the warmth of spring well and truly in the air, Head Chef Cooper Hague, and his dedicated team, have recently released their new spring menu.
This season features a King Fish Sashimi with a soy and sesame emulsion, seaweed salad & a crispy currie leaf. Complete your evening with a Umeshu Panacotta with cocoa nib and honeycomb.
The unassuming and intimate space remains as it did last season, with a focus on exceptional food and delicious Australian wines.
To ensure you enjoy the full fine dining experience, Subo offers matching wines to be paired with each course. Their curated wine selection is focused on organic, minimal intervention wines.
A highlight from their previous menu was the delectable Spring Duck, with crispy skin and smoky flavours.
